Ancient Roman recipe: Mulsum

Just as the Ancient Roman recipe: Frittata was simple to prepare, Mulsum is as well.

Mulsum is unfermented honey mixed with wine (not to compare with Mead)

Ingredients for one bottle of Mulsum:
* Dry white wine
* Three tablespoons of honey

I’ve tested different kinds of wines and it does taste the best with a good dry wine. The contrast between dry and the sweet honey reflect and are in harmony.
Pour a little bit of wine in a glas and dissolve the honey in it, then pour the mixture in the bottle of wine.
Leave it for at least two or three hours in the refrigerator.
Before drinking make sure no honey is at the bottom of the bottle, if this is the case, mix well before serving.

Emperor Augustus claimed Mulsum to be good for the digestion and for being and staying youthful.

    What kind of honey do you use? Accacia honey has a softer taste than the usual bee honey.
    I’ve read that in the old days, they used far more honey than 3 table spoons, but these days we wouldn’t like the taste. Did you try different quantities of honey?

    I have tried forest honey and flower honey.
    I did not try different quantities of honey, these two are pretty sweet which made me just add three tablespoons.
    Secondly it depends on the combination of the honey with the kind of white wine.

    There are lots of combinations to try out and refine the tast of mulsum.

    Which combo and what kind of white wine did you try and was the best (till now) ?
